Fish on a Grill?

There are those cavemen who believe the only thing that should be BBQ’d is beef.

Then there is the pork contingent.

Then there are those who think it absurd to cook beans or desserts on a Weber.

 

Enough already.

Fish is actually quite delicious grilled, despite those who want no part of it.

This is a sweet n salty dry rub for use on salmon.

Use spices from a jar (i.e., dried, not fresh, since the idea is to have a dry rub).

 

1 cup salt

1 cup dark brown sugar

2 tablespoons white sugar

4T finely chopped garlic

3T dried onion

1T tarragon

1 T dill weed

1 T savory

1 tsp black pepper

1/2 tablespoon paprika

 

After the rub has been on for a minimum of 8 hours or overnight, you can pop the fish on the grill, or bake it indoors.

A trick many people do not know for indoor baking, is to use one of those turkey baking bags to preserve moisture.
