Eat Meat Only or Add the Sides?
Some hombres are purists.
They don’t want any bread or side dishes.
That’s a little heavy if you ask me. Too much of a good thing (the good thing being the grilled meat).
Some of the best BBQ experiences I recall have involved the side dishes.
Just like BBQ they can be subject to regionalization.
What goes with BBQ better than a nice salad?
It is always a challenge to find one that isn’t too heavy, but at the same time it is tasty to the max, and combines well with the meat and its sauce.
Here is one my family likes.
It is a wonderful dressing, and something you don’t get when you are using processed salad dressing out of a bottle that’s a hundred years old.
1 C of mayo or Miracle Whip
½ C grated parmesan
3 T of water or pineapple juice
3 T of canola or walnut oil
2 T lemon juice
2 chopped garlic cloves (optional)
1 – 2 T sugar
Fresh chopped parsley if available
Pepper to taste
Salt to taste
This is so simple. Simply combine the ingredients gently. Then keep in the refrigerator til it’s time to eat.
