Beginner Basics

I love BBQ.  No doubt about it.

It’s heavenly. 

BBQ is the food of the angels.  It is divine.

Treat it with respect and you will be well-rewarded.

 

As long as your cook your BBQ the way our elders did in the past, you can hardly go wrong. 

Think ahead before you BBQ.

First make sure you have all the equipment and fuel you need.  Don’t use green wood, as a general rule, or you will regret it. 

When it comes to meat, try not to buy frozen meat and be having to thaw it out.  This puts you behind to begin with, as frozen is not as good as fresh.  There are even those who say mean should never be frozen.  This cuisine does have its purists. 

A nice marbling on the meat will assist you in the areas of flavor and moisture. The  meat should have a nice layering of adipose fat.  

Ideally, the meat should be the same thickness on one piece of meat. If it is thicker in one area that can make it difficult hard to cook correctly.

Pick your meat for the day.

Pick your smoke, either in the wood or the wood chips.

Then pick your sauce or rub.  The sauce for marinade or basting.  You will see that the meat’s flavor is brought out by a fine sauce.

I can almost smell and taste it now!!
